Made Aebleskivers this weekend. One of my very favorite breakfast treats. Easy to make too, as long as you have the pan to do it in. Mine is cast iron and I think that it is probably the best to use. There are others out there but it seems to me the nice heavy iron is the way to go.
Base Recipe modifications: add your yolks and a cap-full of vanilla to the buttermilk (I hate to waste them). Then I use shortening instead of vegetable oil for each cooking well.
